Made from unpasteurised goat’s milk
Moist, soft with a creamy consistency inside and a dry wobbly rind
Predominantly lactic, fresh and spicy aromas with flavours typical of the forest such as moss and mushrooms
Maturation period: 10-15 days – 130g
Bunch comes from Galliners in the province of Girona and is made by Santiago Nudelman. Originally from the academic world, Santiago started his own cheese production after working as an apprentice in a cheese factory for two years
